My wife’s parents have pheasants and we have been cooking with their eggs for the past year. I recently made a puff pastry with pheasant eggs, took 4 hours of folding and refrigerating then folding then repeat. I used the puff pastry to make a meat pie and I feel like Americans don’t appreciate a meat in a pastry. I used a curry minced meat with potatoes and it was out of this world! Now I want to experiment with different meats with different pastry crusts, I’ve never tried to make a hot water crusts for a meat pie but I want to, any tips? Any more recommendations for different crust or different meat fillings for a savory pie?
Hi Jacob - I recently watched, on "The Great British Baking Show," several hot water crusts and other crusts for meat pies, which they eat a lot more in Britain than we do here. I don't eat many (I do love a Jamaican meat patty) and have made even fewer alas. My two favorite baking sites are Sally's Baking Addiction and Smitten Kitchen; you might try there. Also, Ina Garten's and Alison Roman's recipes always work xx
